Potato Salad

Potato Salad
8 Potatoes
2 stalks Celery
12 Stuffed Olives
2 T. Sweet Pickle Relish
2 hard boiled Eggs
3 T. Miracle Whip
Boil the potatoes (with skins on) until fork can be easily inserted. Don't overcook or your salad will end up as mashed potatoes! Set aside to cool. When cool enough to handle, use a butter knife to pull the skins off. Cut the potatoes into 1" cubes.
Slice the celery into 1/4" pieces (or smaller or large if you like). Slice the olives (or buy them already sliced -- Grandma never had that option.) Chop the hard boiled eggs. Add all ingredients to the potatoes and mix. You can adjust the amount of Miracle Whip to your taste.
Keep refrigerated.
